Instant Coffee Recipe

Mornings are the most important time of the day.  My entire morning is based around sitting on my couch to enjoy a hot cup of coffee.  Sometimes I skip blow drying my hair, if it means time for coffee.  There are times when I even skip making my lunch, if it means time for coffee.  Making this time a priority is important because I am able to recharge and take a mindful breath before another hectic day begins.  Days seem to consist of a long commutes, meetings and an overall busyness.  So time carved out in the morning to sip and relax is like the holy grail.  I don’t know about you but I NEED it.

Right now, I am on an instant coffee kick and let me just say, it’s a good time.  It’s not just any old boring instant coffee.  It’s a latte style Nescafe with chicory.  It’s also heaven.  Smooth, creamy, delicate and frothed just right.  And you can control the strength per cup!  It’s basically a win-win situation.

Instant frothed coffee was introduced to me while on a trip to India with my mom.  They served it everywhere.  On the street, visiting family and even while shopping in stores.  Everywhere I went, I was handed a cup of this rich and creamy coffee to sip on and enjoy.  I fell in love and you will too!

This morning ritual always includes music.  Something calm and harmonious.  I suggest pairing your morning coffee with the rich sounds of The Dave Brubeck Quartet’s Album Time Out.  Try it. It’s heartwarming.

Ingredients
1 heaping tsp of Instant coffee (I use Nescafe with chicory)
3/4 cup of boiled water
1/4 cup of warm milk (use non-dairy if you prefer)
sugar (I use coconut sugar)

Directions
Scoop out a heaping tsp of the coffee into your favorite mug
add sugar (I put in ½ tsp but you may prefer more or less)
Pour about 1/4 cup of boiled water into the mug
Using a milk frother froth the contents of the cup until it becomes foamy
Pour in the rest of the water and the milk (if you prefer an extra creamy treat, use more milk than water)

Sip, sip and enjoy!
