Avocado Egg and Tomato Toast

Are you having a love affair with avocado?  I mean, why wouldn’t you?  It’s healthy, filling and tasty.  It spreads nicely and when ripe, melts in your mouth.  OK, it’s me.  I’m having the love affair with avocado.

This recipe combines eggs and avocado, then turns it into a texture party in your mouth.  Spread it on toast and there you have it, a great combination of protein, fat and carb.  Add a veg, like a few slices of tomato and there is no stopping you.

Avocado Egg and Tomato toast is great for breakfast, brunch, lunch and even dinner!  So basically you can eat it at any point in the day and feel good about it.  I recommend eating this avo-egg mix soon after making it because avocado tends to turn brown when stored for too long.  And let’s be honest, everything is better when it’s fresh!

Ingredients
1 ripe avocado
2 hard boiled eggs
pinch of paprika
salt and pepper to taste

Method
1. Using a fork, mash together the peeled hard boiled eggs and the pitted avocado in a bowl.
2. Mix in the paprika, salt and pepper.
3. Spread on 2 pieces of toasted bread (I recommend sourdough or soft wheat…mmm carbs)
4. Top with chopped tomatoes and a little sprinkle of pepper
5. Eat and enjoy!
