Homemade Mayo

I recently started making my own mayonnaise.  Why haven’t I done this my whole life?  It’s amazing!  Here is a list of reasons you should make homemade mayo:

-it tastes better (and you can spice it up)
-it’s cheaper
-less preservatives
-it’s fun to make
-you chose which oil to use (avocado oil is my fav)
-your family and friends will think your a pro
-everything homemade is better
-did I mention it tastes better?  It really does.

I’ve been making it on repeat for my family.  Up until now, I haven’t had a lot of mayo in my life.  Now that I started making it, I spread it on everything.  It’s makes everything more delicious!  Fish, french fries and sandwiches.  Use it  to doll up any meal.  If you want to get super fancy add spices, lemon and sour cream and there you go…ladies and gents you have ranch dressing.

Ingredients
1 egg yolk
1 tbsp of dijon mustard
1 cup of oil (I prefer avocado oil but grape seed oil works well too!)
2 tsp of white vinegar

Method
1.  Using a fork, mix the egg yolk and dijon mustard together in a medium size mixing bowl
2.  Using a hand blender, blend the mixture as you slowly pour in the oil (create a thin stream).  The mixture will begin to emulsify.  Go with it.  You’re making mayo.  It’s a satisfying process.
3. Continue to mix using the hand blender as you simultaneously slowly pour in the oil until you’ve used all of the oil.
4. Next, add vinegar and mix in (using the hand mixer or a spoon).
5. Spread EVERYWHERE.
