Crispy Potato Wedges with Zatar and Tahini Sauce

Do you ever get an intense hankering for fries?  I do.  The craving is real.  I’m much more of a wedge woman compared to measly shoestring mama.  Thick cuts of potato wedges are where it’s at.  Sure, it’s easy to stop by a fast food restaurant and order some French fries or wedges but are you really satisfied after?  Or do you feel like you ate a cannon ball of deep fried potatoes followed by some serious lethargy.  If you are like me, then you can relate to the post potato exhaustion.

This baked potato wedge recipe is going to satiate your carb craving and you won’t feel like sleeping for days after you’ve eaten it.  Even better, they are tossed in za’atar.  This amazing seasoning used in Middle Eastern cuisine, is made up of spices that promote skin health and decrease inflammation in the gut.  So you get all of this AND satisfy your hankering for carbs.

You can’t have wedges without something to dip them in.  Tahini is naturally a suitable choice to complement za’atar wedges.  We all need more tahini in our lives.  It’s rich in healthy fats and is a great source of vitamins and minerals.  Pair it with soy and a little lemon and you’ve got a dipping sauce to enjoy with your wedges.

One more thing for the ladies.  This combo is PMS approved.

Ingredients

Potato Wedges
5 russet potatoes cut into wedges
2 tbsp of olive oil
2 tbsp of Zatar spice
1 tsp of salt

Tahini Sauce
2 tbsp tahini
1 tbsp lemon juice
1 tbsp soy sauce
1 tbsp of mayo (or veganaise)
2-3 tbsp of warm water (adding 1 tbsp then mixing before adding another)

Method

Preheat the oven to 400°F.
Place the raw potato wedges into a mixing bowl.  Add the olive oil, zatar and salt.  Toss and mix until the zatar, salt and oil is evenly coated on the potato.  Spread the potatoes on a greased baking pan.  Make sure you leave some space between each wedge.  Place in the oven for 35 minutes.

Stir all of the ingredients for the tahini sauce in a small bowl until you reach a smooth consistency.
You can add more water to create a smoother consistency.

Now go on and satisfy that carb craving.
